I must give honor to my Mom-in-law and my mother. Most of my recipes come directly from them.
Oneness Peanut Butter Cookies
1 cup of peanut butter (creamy or crunchy)
1 egg
1 cup of regular sugar
1 tsp vanilla flavoring
* Turbinado sugar - optional
Preheat your oven to 350. Mix all ingredients in a medium sized bowl. Place spoon sized balls of dough on a greased cookie sheet. Press down with a fork. * Sprinkle turbinado sugar on top of the cookies. Place in the oven and bake for aprx 10 mins. Let set for 10 mins to cool. These cookies are very soft and chewy. If done right the cookie will stay soft for as long as it takes to be eaten. (Not more than a day most times!)
CASEY'S PRIZED LOADED BAKED BEAN RECIPE
(just in time for July 4th! This is what I'm always requested to bring to any family or church function.)
3 small cans of Show Boat pork and beans
1 lb of bacon
1 lb of hamburger meat
1/2 onion, I use minced onions, LIKE SHAKE SHAKE AND THAT'S ENOUGH:)
3/4 cup brown sugar,packed
1/2 cup regular sugar
1/4 cup bulls eye bbq sauce
3/4 cup of ketchup
Preheat your oven to 375. Fry bacon until crispy, snap into crispy. Set bacon aside and brown hamburger with onions. Place beans in a 9x13 dish or a deep casserole dish. Add remaining ingredients and if you like salty sprinkle SeasonAll on top after you stir it up really well. Place in the oven and bake for 45 minutes to and hour.

SWEET POTATO CASSEROLE
3 cups cooked mashed sweet potatoes
2 eggs
1/2 cup milk
1/2 tsp salt
3/4 cup sugar
1 tsp cinnamon
1/2 stick melted butter
1/2 tsp real vanilla
Mix all of the above and put in a casserole dish.
In a separate bowl mix...
Topping:
1/3 stick of melted butter
1/2 cup flour
1 cup brown sugar, packed
1 cup chopped pecans, I have used walnuts also
Mix together and crumble on top of sweet potato mixture. Bake at 350 for 35 minutes.
This is so much better than the marshmallow kind.
HEAVENLY CHICKEN- a glorified chicken and dressing
1 whole chicken boiled and deboned( I just boil chicken breasts.
Hmmmm...about 4 or 5)
1 stick of butter
4 cups of cornbread crumbs (Two boxes of Jiffy. It does better if you make the corn muffins and then crumble)
1 cup of sour cream
1 can of mushroom soup or chicken, I've used both.
1/2 onion chopped, again I used minced...shake shake that's enough.
1 tsp of pepper
1 tsp of salt, or to taste
and IF you really want a dressing taste add some sage. Say 1 tsp. but I DO NOT.
1 Quart of chicken broth
Preheat your oven to 350. Line a 9x13 dish with half of your crumbs. Melt your butter and pour it over the crumbs. Then layer your chopped up chicken on the buttery crumbs. In a separate bowl mix sour cream, soup, onion, salt, and pepper. Smooth it on top of the chicken. Cover this mixture with the remaining bread crumbs.
Pour the chicken broth all over the dressing. How ever much it'll take according to our dish. It's probably pretty full right now. Bake at 350 for 1 hour.
This is soooooooooo gooooood.
